My son named this one. I'm not sure what it is about serving food on toothpicks, but both of my kids really enjoy eating this way. This is a nice recipe that can be served alone or with a GFCF sauce.

1 pound lean ground beef, turkey, or bison
1 beaten egg or 1/4 cup flax gloop
2 tablespoons GFCF bread crumbs, quinoa flakes, or GF oats
1/4 cup GFCF milk (nut, rice, soy, DariFree)
1 teaspoon Italian seasoning
1 teaspoon dry mustard
1 teaspoon onion powder
1/4 teaspoon sea salt

1) In a medium bowl, mash together ground beef with egg until completely combined. 2) Add bread crumbs or quinoa, spices, and milk. Mash again.
3) Roll meat to form 1-inch balls. Arrange on a broiler pan and bake in a 400° preheated oven for 10 minutes. Roll meatballs and bake for 5 minutes more, or until meat is completely cooked.
4) Serve warm with GFCF barbeque sauces such as Mr. Spice, Bone Suckin' Sauce, or Daddy Sam's. Makes 3 dozen meatballs.
