Fish crackers are another popular snack for teaching activities. This recipe is super-quick to mix up and the kids love having the variety.

Dry Ingredients

1-3/4 cups GF all-purpose flour
1/4 cup soy flour
1 teaspoon GF baking powder (Featherweight)
1 teaspoon sea salt
2 tablespoons almond meal or DariFree
1 tablespoons nutritional yeast
3 tablespoons almond meal
1 teaspoon xanthan gum
1/2 teaspoon garlic powder

 

Wet Ingredients

1/2 cup GFCF butter, melted (Earth Balance, Spectrum)
1/4 cup GFCF milk (rice, soy, nut, DariFree)
1 teaspoon apple cider vinegar or lemon juice

1) Measure dry ingredients into a food processor. Pulse several times to combine.
2) Measure wet ingredients into food processor and pulse several times until the dough is crumbly and will form a ball when pinched together.
3) Preheat oven to 400°. Divide dough into half. Line baking sheets with silpat or parchment.
4) Place dough between two sheets of plastic wrap and roll to 1/4-inch thick. Remove top plastic wrap and cut dough with tiny mini-goldfish cookie cutter.
5) Arrange fish on prepared baking sheet, about 1-inch apart. Optionally sprinkle with sesame seeds. Bake for 10 to 12 minutes; do not over bake. Makes six dozen crackers.
