There's no way my kids would ever eat spinach. But, I fixed this quick quiche one day after reading the Dr. Seuss favorite, and guess what? My kids ate it! You just never know what will inspire kids to read or eat.

1/2 batch GFCF Pie Crust

Filling

5 eggs, beaten
1 cup GFCF milk (nut, soy, rice, DariFree)
1 cup cooked spinach, drained and patted dry
1/2 cup cooked ham, cubed
GFCF cheese (Tofutti or Soymage) (optional)
2 tablespoons GF all-purpose flour

1) Line a 9-inch pie plate with pie dough and prick the bottom.
2) Bake in a preheated 375° oven for 12 minutes or until the crust is light brown. Reduce oven to 325°.
3) While the shell is baking, in a medium bowl, whisk together eggs, GF flour mix, and milk until completely blended.
4) Toss in ham, spinach, and optional cheese. Stir lightly to coat. Pour mixture into hot pie shell and bake in 325° oven for 40 minutes or until a toothpick comes out clean.
5) Let stand for 15 minutes before slicing.

Serves 4.
