GFCF Lunch Notes

You don't have to be fancy to make it through lunch! I have found that the best way to succeed at this meal is by adding personal touches. First, for packed lunches, a fun lunchbox is essential. Then, put a sticker on the sandwich bag or tuck in a love note (don't use stickers if your child is still mouthing things as the glue may have forbidden additives).

GFCF Corndogs

I'm not sure why it's so fun to eat things on a stick. But it is! Try it.

Dry Ingredients

1 cup GF all-purpose flour
3/4 cup Masa Harina or extra fine ground yellow cornmeal
2 tablespoons sugar
1/2 teaspoon xanthan gum
1-1/2 teaspoons GF baking powder (Featherweight)
1/2 teaspoon salt
1/4 cup rice flour for dredging
