Serve these with GFCF butter, syrup, or just plain. The kids love them as a side to eggs or toasted with nut butter for lunch.

Dry Ingredients

2-1/2 cups GF all-purpose flour
2 tablespoons sugar
2 teaspoons GF baking powder (Featherweight)

 

Wet Ingredients

4 eggs
2 cups GFCF yogurt (Silk plain, vanilla, or even fruit)
2 tablespoons oil

1) Preheat waffle iron.
2) Whisk together dry ingredients in a medium bowl.
3) In a separate bowl, whisk eggs until lightly beaten. Then, add yogurt and oil, and whisk to combine. Stir wet ingredients into the dry ones, just until combined.
4) Spoon into hot waffle iron. Bake until golden brown. Makes 18, 4-inch waffles.

 

Creative Alternative

You can use Silk vanilla or fruit flavored yogurt for a delicious Belgium-like waffle. You may want to reduce sugar since these yogurts are sweeter than the plain variety.
