GFCFpancakesAlmost identical to the buttermilk pancake recipe, this recipe tastes just like your old favorites. We love this recipe with slices of bananas baked in the cakes!

Dry Ingredients

1 cup GF all-purpose flour
1 tablespoon sugar
1 teaspoon GF baking powder (Featherweight)
1/2 teaspoon baking soda
2 tablespoons DariFree or Soyquik

Wet Ingredients

2 eggs
1/4 cup GFCF milk (nut, soy, rice, DariFree)
1 tablespoon safflower or sunflower oil

1) Preheat griddle.
2) Whisk together dry ingredients in a medium bowl. In a separate bowl, whisk eggs until well beaten. Then, add milk and whisk until combined.
3) Fold wet ingredients into the dry ones, just until combined. Lightly mist griddle with oil. Use ladle to scoop batter onto hot greased griddle.
4) Fry the cakes just like you would any pancake: when bubbles form on the top and the bottom is brown, flip and brown the other side. Makes 12, 4-inch pancakes.

Creative Alternative

Spoon batter into a gallon-size freezer bag, snip off a corner, and write letters on hot griddle. Spell your children's names or initials to brighten up their day. You can inspire literacy in so many GFCF ways!

Quick tip
Stir up the dry ingredients and seal in a a baggie. Bring along on vacation, where most large grocery stores will carry all of the wet ingredients
