Breakfast can be as simple as a bowl of gluten-free cereal with a glass of casein-free milk or as hearty as GFCF pancakes, eggs, bacon, and grits.
• Buy bacon that is nitrate and hormone-free; be careful about sausage as it can contain fillers, nitrates, or other restricted additives. • There are delicious GFCF frozen waffles (Nature's Path) that can be found in or ordered by your local wholesome food stores. • Protein in the morning is preferable because it helps balance blood sugar and improves concentration. • Look for delicious GFCF kid-friendly cereal products including crispy rice and corny flakes (EnviroKidz, Erewhorn, Ancient Harvest). • Oatmeal is not acceptable on a GFCF diet because it is often grown and processed with wheat or wheat equipment. Look for gluten free oats. • Barley malt, which is not GF, is found in many cereals as a sweetener. • Always remember that the morning meal does not have to be our traditional breakfast food.
