I like to make one regular sandwich loaf and one raisin loaf for a nice treat. Serve the raisin bread warm with GFCF butter or toasted with nut butter.



1 batch Basic GFCF Sandwich bread
1/4 cup sugar additional (optional)
2 teaspoons cinnamon
1 cup raisins

1) Prepare Basic GFCF Sandwich Bread, mixing in the cinnamon and optional extra sugar with the dry ingredients.
2) Once dough has been beaten for the 3 minutes, gently fold in the raisins with a spatula scraper.
3) Cover loaves with paper towel and set on top of preheating stove for 30 minutes, or until dough is just above the pan edge. The time will vary depending on climate, altitude, and humidity.
4) Once risen, place uncovered loaves in a preheated 350° oven for 1 hour.
After baking, cool for 30 minutes then turn out loaves onto a cooling rack. Cool completely before cutting and storing.

Makes 2 loaves.
