Finding delicious, store-bought gluten-free, casein-free (GFCF) bread is challenging. But it can be downright discouraging when experimenting with special diet recipes. Talk about heartbreaking! This section contains my most frequently used recipes and are simply delicious. Here are some more ideas to get a quick start:
• Premade GFCF breads and crusts can be found: Food for Life, Energy Food Factory, and Nature's Highlights can be found in the freezer section of some wholesome grocers. Kinnikinnick makes very palatable GFCF breads, check out goglutenfree.com to order on-line. • Mixes can speed up the process. Manna from Anna, Bob's Red Mill, the Gluten Free Pantry all make delicious mixes. • Check out the book The Gluten Free Gourmet Bakes Bread by Bette Hagman for many great bread ideas. If you can tolerate breads made with bean flours, experiment with the bean flour mixes. They have a far-superior texture; it's worth a try! • Muffins made with GFCF ingredients are quick to prepare and are almost identical in texture to wheat recipes. • GFCF bread and pizza doughs are sticky. Unlike wheat dough that can be pulled and tossed, our dough needs to be scooped onto a prepared pan and gently smoothed down with greased hands or a smoothing spatula.
